This
weekend I decided to take my family on a "trip" to India!!! Normally, a
flight from New York to India is about 14-17 hours but I got us there in 8-10 hours with my new slow cooker!
I recently celebrated a birthday and my mother (begrudgingly) got me a slow cooker. She didn't think that was a fun birthday gift but it was JUST what I wanted and lately, with my Pinterest obsession, I've been wanting to try a few recipes.
This weekend's meal was a yummy lamb stew which I am still salivating over. It was my first time using my new crock pot and yes... I'm addicted to it. While we were at the grocery store it was cooking all day - so easy!
Here are the ingredients for the Indian lamb stew.
1 1/2 lbs sweet potatoes (peeled and cut into 1 1/2
inch cubes)
1 onion (chopped)
1/3 cup raisins
1 tsp cumin
1/2 tsp salt
1/8 tsp cayenne
1 clove of garlic
1 1/2 lbs lamb stew meat (cut into 1 12-inch
cubes)
15 ozs diced tomatoes
15 ozs chickpeas
2 tbsps fresh cilantro (chopped)

In 4
quart crock pot, layer potatoes, onion, and raisins.

In a
bowl, combine cumin, salt, garlic and cayenne. Add lamb and toss to coat.

Place
lamb on top of potatoes. Add tomatoes with juice.

Cover and
cook for 8-10 hours on low.

Stir in
chickpeas during the last 5 minutes of cooking.

Serve
sprinkled with cilantro

After dinner, I read "Adventures That Lead to Home" which is published by Hartlyn Kids. I figured, why not continue our trip with a great story about a young boy living in rural India who visits his cousin in the city....
